Become a Junior Chocolatier for a week! In August 2019, Forte Chocolates will be hosting a chocolate summer day camp for students aged 6-14 years old. Each class will be taught by Master Chocolatier Karen Neugebauer and her team of chocolate artisans using quality chocolate from around the world. Working with chocolate is part-science, part-art, and full of fun!

August 5-9th 2019

Chocolate: From Bean to Bar. A Tasting and Making Experience.

Join us for a hands-on experience of how chocolate is made. Starting with a roasted cacao bean, we will be learning about the growing and roasting process, winnowing beans, comparing the ancient mortar and pestle way of grinding beans and the modern way to grind beans, and finishing with edible chocolate! The students will also make hot chocolate the classic Aztec way! In this very hands-on class, the students will bring home a jar full of ingredients to make chocolate at home with their friends and family and learn more about the medium they'll be working with for the rest of the week!

Flavor Development and Chocolate Bar and Caramel Apple Making 

Each Junior Chocolatier will be designing and making mini chocolate bars with 12 unique flavor combinations of their design. After deciding what they think is the best flavor, they'll create a larger bar and design a custom wrapper for it! Then they'll design a caramel apple flavor and package that in a wrapper they have designed. Each student will go home with their 12 mini chocolate bars and their masterpiece bar and apple to share with their family!

Truffle Making

Junior Chocolatiers will be designing domed, rolled, and dipped truffles and fruit! They'll learn tempering, piping, capping, and molding in this class. Junior Chocolatiers will be going home with a box brimming with truffles and fruit treats they have made!

Build a Chocolate Sculpture and Edible Cocoa Butter Painting

Junior Chocolatiers will be designing their own edible chocolate sculpture to show their friends and family! They will be learning about transfers, textures, tempering, and sculpture theory. They'll finish their sculpture with tempering and cocoa butter painting.

3D Modeling Chocolate Sculptures Figurines 

We will be challenging each Junior Chocolatier to use molding chocolate and create specific shapes and their own designs! The more creative the better. Junior Chocolatiers will learn a variety of techniques and create a cake topper for their personal mini brownie cake.
